Homemade: Baked vege cheese rice

Spent my thanksgiving weekend discovering simple, healthy and yum homemade dishes!

And here’s the baked mix vegetable rice. Ingredient:

  • Portobello mushroom
  • Brussel sprouts
  • Onion
  • Cucumber
  • Olive oil
  • Butter
  • Minced meat/ sausage (optional)
  • Garlic
  • Brown rice
  • Cream cheese
  • Mozerella cheese

Rinse vegetable. Cut brussel sprouts into half and cucumber into cube. Slice some onion as well.   Stir fry with olive oil. Lightly cook. (Put aside when done) Heat pan with 1 teaspoon butter and garlic. Melt in 1 tablespoon cream cheese with some water. Add brown rice and minced meat (cooked).

Preheat oven at 350°F

Layer fried rice at the bottom of oven safe dish. Top with mixed vegetables. Cover with sliced mozzarella cheese.

Bake for 25mins or cheese top become lightly golden. Ready to serve!!

P/s: for more moisture, add milk and parmesan cheese to fried rice.

Feel free to create your own mix of vegetables! I forgot my tomato cubes 😥😥

Eat in Brussels: God Save the Cream

The Board & Homemade beef pie.Victoria Sponge cake.

Address: 131 Rue De Stassart, 1050 Bruxelles

Organic, homemade dishes and pastry. Great vibe and delicious food. The hot chocolate wasn’t my favourite. It came in a glass of milk with a little cup of chocolate chip on the side. Very interesting but not rich enough. Love the cake, not too sweet. The beef pie and fresh veggies, best combo! No excuse to not eat healthy when travel.

The place located right around the shopping area- Boulevard de Waterloo for high end, luxury boutiques and Avenue Louise for fashion labels. Break/ brunch spot to start the day.
